Taste: One of the last truly seasonal cheeses, Vacherin is a winter favourite. Only made when the cows come down from the mountain pastures, it’s punchy and strong, with an earthy, piney note thanks to the band of spruce bark that’s wrapped around the maturing cheeses to help them hold their shape!
Please note, all weights are cut from a large wheel, only the ‘mini’ is suitable for baking.
