Taste: Francis begins it’s life as Stoney Cross, a flaky, firm cheese made by Lyrun on the edge of the New Forest. James takes miniature versions of the cheese, made especially for the affineuring process, and washes them to develop a pungent, very sticky rind which gives a definite tang to the gentle, bright flavours of the cheese.
