Based on the classic Vacherin Mont d'Or, Rollright is wrapped in a spruce sanglier - a band cut from the cambium, one of the inner layers of bark. Regularly washed in brine over a month in the maturation room, the cheese develops a peachy coloured, sticky rind as it nears perfection.
Gently pungent on the rind with a savoury note. The paste is rich, mellow and slightly woody with a creme fraîche-like lactic tang
Great with slightly tart fruity or nutty accompaniments - damson fruit for cheese or pickled pears or walnuts. Also incredible baked, in which case some cornichons and crusty bread to dunk.
